Is it hot enough for ya?!

After weeks of sweltering heat here in Minneapolis, we decided it’s time to get creative when it comes to staying cool. When it comes to refreshing beverages, we’ve thoroughly enjoyed our Clementine Mojito Mocktails, Palomas with Chili Lime Salt, and Blackberry Lime Mint Juleps this summer, but this many 90-degree days means we need to bring in the big guns.

Aka… Boozy Aperol Spritz Popsicles!

These slightly boozy popsicles are the perfect way to cool down during a heatwave, especially when served with a splash of Prosecco!

 
 

Boozy Aperol Spritz Popsicles

Prep Time: 10 minutes
Total Time: 8 hours 10 minutes
Makes 10 popsicles

METHOD

In a 4-cup liquid measuring cup or medium bowl, stir together the lemonade, Aperol, and orange juice. Divide the mixture evenly among the popsicle molds.

Freeze for at least 1 hour then insert popsicle sticks. Return to the freezer and freeze for 6 to 8 hours or until solid.

To remove popsicles, run warm water on the outside of the popsicle mold until it releases. If desired, place popsicle in a glass and serve with prosecco.

INGREDIENTS

  • 2 cups lemonade

  • 3/4 cup Aperol

  • 1/2 cup fresh orange juice, strained

  • Prosecco, cava, or club soda
