Whether the weather matches the season or not, we love sipping this Clementine Mojito Mocktail. Plus, you can shift this recipe to being a cocktail just as easily as Mother Nature can shift back to winter!
Clementine Mojito Mocktail
Makes 1 Mocktail
METHOD
To make the Mint Simple Syrup: In 1-quart saucepan, mix sugar and water. Heat about 2 minutes over medium-high heat, stirring constantly until sugar is dissolved. Remove from heat; add the mint, muddle gently to release flavors and set aside 1 hour to cool.
Remove the mint, pour syrup into glass jar. Cover jar; refrigerate until ready to use. Makes about 1/2 cup.
To make the mocktail: In a highball glass, muddle the mint leaves with the simple syrup. Fill the glass with ice. Add lime juice and clementine juice and stir gently. Top with the sparkling water and garnish with a sprig of mint.
